I'm lovin' these old chuckwagon photo's... I'm lovin' my kitchen too, especially after I see this photo. So Mom, please forget that I complained I needed more counter space today!
I started my "make ahead and freeze food" frenzy today with this Curried Rice Pilaf. The recipe is here. It has HIGH reviews on the All Recipes Site and it has HIGH reviews from me too! Very tasty! I ended up making 5 batches of it to fill my 6 containers. I can add the raisins and toasted almonds before serving. Each container holds about 6 good size portions. Should be just right for our family of 5.
Then I completed my frenzy with these Freezer Mashed Potatoes. The recipe is here. I made about 3 batches of these to fill my 6 containers. I also added 2 yams for color and a hint of sweetness and I used garlic salt instead of onion salt. They are good! They are really, REALLY good! Just read the recipe and you'll understand why...

You've been busy! The nice thing about chuck wagon cooking is he doesn't have to wipe those counters or the stove down when he's done. (He does have to haul the water to wash the dishes though...) :)
