Jumping On The Chuckwagon

I've seen some posts lately about 'make ahead and freeze' meals. So, I'm jumping on the 'chuckwagon', so to speak. I think it's a great idea and whenever I take the time to do it, it always serves me well!

So far, I have these two meals frozen in the freezer. Gallon Ziplock bags of regular chili and white chili...

And here's what I have going on for tomorrow morning...
I thought I would start small with mashed potatoes and rice pilaf. So that way, I can take out one or the other early in the day and add it to my supper for the evening. You know what that means right? No rushing to peal potatoes at 5 o'clock and no stressing over the 45 minutes it takes to cook brown rice! It's all done and I just have to warm it up in the oven along with my meat. Then I throw together a fresh salad, cook some beans or corn from the freezer and voila! Supper's on at 5:30-right as my husband walks in the door from work! Chows On! Well, maybe...

Anyway, wish me luck. I will let you know how it goes and keep you updated on more recipes that I try. I have heard of several moms getting together and doing this all together in one day. Any of you local Mom's up for that sometime? Let me know! ;)

I also wanted to mention something else I do that really works nice. I make double the amount of hotdish, soup, casserole, etc. of what we eat for supper and then I freeze the other half in a oven safe container. Then in a week or two when I need a quick meal, I take it out to thaw and cook for supper.

Just another "save time" idea that probably everyone has thought of already. But wanted to mention it... :)

I can hardly do the "double the amount" thing, because I'm already making such large amounts for meals around here, but I will be looking forward to your posts on make ahead meals. I've wanted to try this for a long time and haven't done it!

i made meals ahead when I was pregnant with all 4. so after the baby was here, all I had to do was 'thaw-n-heat'! so, so handy. i need to start doing that again! good luck!

Well, my morning turned out a little different than I had planned. Had to take our cat to the emergency weekend pet clinic. Ouch! on the checkbook but I really couldn't think of any thing else to do for him... poor guy.

He was the black kitty in my 1st rounded corner post a while ago and something had taken a couple chunks out of his neck... He should be okay we hope.

So, I'm at it now making my rice pilaf. It smells like curry...yum!

Don't throw it in the crik!!! Put it in the freezer and save it fer later! Oh yeah, they didn't have freezers in chuckwagn's YEE-HAW!

Whoa! You are way ahead of me in the "planning/thinking ahead" category. Great idea. Probably I won't get to it this year, though. ;)
